Christophe's ~ SPICE RUB BROWN SUGAR PORK LOIN

This recipe is really easy to make and can make dinner for 6 guests.
It takes a little preparation. You can make your own rub or buy it in a store. Making your own is often much better than store bought.
The following is my rub recipe:
2 tsp Paprika
Cayenne pepper (to taste)
2 tsp Salt
2 tsp Pepper
2 tsp Brown sugar
2 tsp Dill
2 tsp Garlic powder
*This rub can last for 6 months.
NEEDED:
1 pork loin
1# Brussels sprout
1# Fingerlings potatoes.
Butter
Olive oil
RUB
Put a generous amount of the rub in a bowl. Add olive oil until it becomes a paste (on the wet side)
Pork loin
Rub the pork loin with a generous amount of butter. Apply your rub all over. Keep some rub for the vegetables.
TIP
Prepare everything the night before and let it sit overnight to soak in the flavor.
Next day when you are ready to cook, take the pork out and let it get to room temperature .
TIP
Cooking needs foreplay, you cannot go from really cold to super hot 🥵...
It needs to warm up a little . Lol
*In the meantime, cut your Brussels sprouts and potatoes in half.
Rub them with the rest of paste .
TIP
Weigh your pork loin before. The cooking time is 20 minute per pound at 425 F
When the pork loin reaches 145F take it out, cover it and let it rest for 10- 12 minutes.
Then carve it!
